IF you take the recent book "Tarkin" as remaining canon (and IIRC, it's published after the acquisition by Disney; "Death Star" is Legends now but would also apply), then Tarkin does not know. There are so many excellent callbacks to The Clone Wars (even Ahsoka gets name dropped) and there's a particular chapter that details a conversation between Tarkin and Dooku before the war breaks out that is extraordinarily insightful.
